This is how I like it and grew up eating it - lots of greens and less of the grain.       <image:caption>Caramelized bits of shredded cabbage, mildly spiced with cumin and chili powder with a hint of sweetness from a small amount of sugar - a perfect side dish that can be prepared in under 30 minutes! So good! I’ve adapted my mom’s recipe by replacing a neutral oil with sesame oil. Feel free to use any variety that you like. Ingredients 1 tbsp sesame oil 4-5 cups of shredded cabbage (Cut the cabbage in half, place the cut-side down and then thinly slice them around the core) 1 cup of frozen peas 1 tbsp cumin seeds 1 tomato, chopped 1 tsp ground turmeric Chili powder (as needed) (You may use paprika, cayenne etc) Salt, to taste 2 tsp sugar .or grated jaggery . . Instructions In a large skillet over medium-high, toast the cumin seeds in the sesame oil, until fragrant, stirring constantly Combine the shredded cabbage, frozen peas, ground turmeric, ground cayenne and salt into the pan and cook covered for 3-4 minutes Uncover the skillet, stir well once again, sprinkle some water if it appears too dry and cover, reduce heat and continue to cook for another 8-10minutes, stirring once in between Uncover and continue to cook, stirring occasionally for a minute, making sure all the water (if any) has been absorbed. BY this time, the cabbage would be tender and slightly brown Add the chopped tomato, sugar/jaggery, stir until well combined and cook for another 7-10 minutes until the tomato pieces appear wilted Turn off heat. Check for seasoning and doneness. Serve as a side with some rice and dal, or flat bread . *The cabbage will take up a lot of room in the pan but after a few minutes, it will cook down pretty quickly *A good addition to this is cubed potatoes, Simply chop and add some potatoes along with the cabbage and cook them all together by following the instructions above. .</image:caption>

      <image:caption>Here’s another dish inspired by domatokeftedes that we had in Epidavros. Created my own spin (thanks to yet another kind chef for sharing some tips). In Epidavros, we were fortunate to watch the Greek tragedy, Elektra by Sophocles - performed by the National Theatre of Greece at the ancient theater of Epidaurus. This experience was humbling. Being in a 3000 year old outdoor theatre, sitting in seats that play-goers have sat in for thousands of years. We were with close to 10,000 friendly Greek spectators who are so proud of their history &amp; culture &amp; have kept this tradition &amp; theatre intact. The play was in Greek (with English subtitles) &amp; the performances were amazing. The colors of the setting sun right at the start of the play made it extra special &amp; our experience magical.</image:caption>

With the addition of cardamom &amp; fresh fruits, these thin and delicate crepes are the perfect balance between a comforting fresh breakfast and complete and utter decadence. Had to try a couple of times to perfect the consistency &amp; this one works really well! I think almond butter complements the cardamom flavor, way more than peanut butter. I’m not sure if that’s because I’m a huge fan of almond butter! Serves 4 Ingredients *1 1/2 cups all purpose flour, sifted *3/4 Tbsp corn starch, sifted *1 tbsp ground cardamom *1 tablespoon maple syrup * 1 cup of unsweetened dairy free milk (I used almond milk) *1/8 teaspoon salt *1 tsp lemon zest *1 tsp vanilla extract *3 Tbsp unsweetened vegan butter, melted *Unsalted vegan butter for cooking the crepes (I used Flora Plant butter) Toppings/flavor *Crunchy peanut/almond butter, as needed *Your favorite jam/jelly, as needed *Fresh fruits . Directions Mix together the milk maple syrup, melted butter, &amp; vanilla extract in a large bowl Add the flour, cornstarch, lemon zest, salt, &amp; ground cardamom to the bowl &amp; whisk until well combined Leave the batter in the refrigerator for 15 minutes while you prepare the toppings &amp; pre heat the pan Heat a medium skillet over medium-high, then brush with butter. Ladle about 1/3 cup batter into skillet &amp; after about 2-4 seconds, lift the pan &amp; swirl it to evenly coat bottom. Cook the crepe until the surface appears dry &amp; the edges appear slightly crispy, about 2-3 minutes Slide a spatula underneath crepe to loosen &amp; flip. You can add some vegan butter, if you like, before you flip the crepe for some extra buttery flavor Cook on the other side until you see a few light brown spots about 15-20 seconds, then transfer to a plate. Cover with a kitchen towel while while you cook the remaining crepes. To serve 1. Spread each crepe with some jam and crunchy unsweetened almond butter &amp; fold or roll them up 2.
