The beauty of this utterly refreshing salad is that it's so simple, but still so tasty. A delicious dressing featuring sumac and dill brings the whole bowl together. Salads like this are endlessly adaptable and super-filling and that’s what I love about them. Feel free to add more or less of any ingredient to suit your taste.



Red bell pepper, finely chopped
English cucumbers, chopped
Tomatoes, chopped
Purple cabbage, chopped
Scallions, finely chopped
Apples, diced into small pieces
Kale, finely chopped and massaged with some olive oil
Roasted unsalted pecans
Salt

Salad dressing recipe
4 cloves of minced garlic
1/2 cup fresh squeezed lemon juice,
1/2 cup extra virgin olive oil
1-2 tbsp of tahini (stirred well)
1 tsp. powdered Sumac, plus more for sprinkling
on individual salad plates, if desired)
1/4 cup freshly chopped dill, finely chopped
Salt, to taste
Pepper, to taste

Add all the salad ingredients to a bowl
Add the dressing and toss together to combine Check for seasoning and adjust according to your preference.

Keep the chopped salad refrigerated until it is ready to serve. Add the dressing just before serving
