Classic Hommus

Hommus
Ingredients
1 cup dried chickpeas (soaked in hot water for at least 3 hours before cooking
1/2 tsp baking soda
Salt, to taste
2 cloves of fresh garlic
About 2/3 cup tahini
Juice from 1 lemon
Some olive oil for drizzling on top
Sumac, a sprinkle (optional)

Instructions
Cook chickpeas thoroughly, until they are soft & mushy.
Drain the water & blend chickpeas along with salt, garlic, tahini & lemon juice with a few cubes of ice and 1 tbsp water, until smooth & creamy
Add some olive oil if you like while blending
Serve with a drizzle of olive oil & a sprinkle of sumac
