Crispy oven roasted potatoes with crispy garlic

Jazz up your taters for a no-fuss side dish. Minced fresh garlic is key to these flavor-packed potatoes! These potatoes are bold and spicy and you gotta make them ASAP! The crunchy garlic bits = the star here!

* 1 1/2 lbs potatoes, washed thoroughly
* 2 tablespoons olive oil
* 6-7 garlic cloves, minced
* Salt, to taste
* 3 scallions, chopped
* 2 Thai chilis (pick the variety and quantity to your preference)
* 1 tsp chili paste
* 3 tbsp tamari or soy sauce
* 1-2 tbsp liquid sweetener

INSTRUCTIONS
1. Preheat your oven to 450°F and line a large baking sheet
2. Place potatoes in a wide saucepan and cover with cold water.
3. Bring to a boil over high heat, reduce to a simmer, and cook until potatoes are almost tender and
4. Carefully drain the potatoes. After about 5 minutes, cut them lengthwise and set aside
5. Combine oil with garlic, salt, chili peppers, scallions, potatoes and toss to coat.
6. Arrange potatoes in a single layer on the prepared baking sheet.
7. Bake for 25-30 minutes (check every 7-10 minutes and give the pan a shake) or until potatoes are tender inside and crispy and browned outside.
8. Remove the baking sheet from the oven and gently stir in the soy sauce/tamari, sweetener, chili paste
9. Top with some fresh scallion greens and server hot
