Easy Cauliflower Bean Chili

Top with creamy avocado slices and you have a delicious balanced meal in a bowl. Richly spiced with wonderful layers of deep, savory flavor. The ingredient list is long, but the effort involved in making this chili is minimal.

Serves 4

Ingredients
* 1 large yellow onion, diced
* 2 cloves of garlic, minced
* 2 stalks of celery, diced
* 2 jalapeños, diced
* 1/4 cup roasted red pepper, freshly roasted or jarred
* 1/2 cup grated cauliflower
* 1 can diced tomatoes (28 oz.)
* 1 tbsp tomato paste
* 1 veggie buillon cube
* 1/8 cup bulgur
* 3 cans of mixed beans - no salt added (kidney, pinto, butter)
* 1 tbsp hot smoked paprika
* 1 teaspoon ground cayenne pepper
* 3 teaspoons ground cumin
* 1 tbsp sweet paprika
* 1 1/2 tsp unsweetened cocoa
* Salt, to taste

Instructions
1. In a large pot, add onions and garlic, season with salt and sauté on medium heat.
2. Add jalapeños, celery, bell pepper and grated cauliflower and sauté for another 5 minutes
3. Add diced tomatoes, veggie bouillon, tomato paste followed by 3 cups of water.
4. Increase heat and add ground cumin, hot smoked paprika, cocoa, sweet paprika, ground cayenne and bulgur and simmer the mixture for about 10 minutes, stirring often
5. Add in the drained beans. Adjust water by adding some, just enough to submerge all the ingredients in the pot
6. Reduce heat and simmer for 25 minutes, stirring occasionally
7. Turn off heat and serve hot with fresh chopped cilantro, lemon, jalapeños, avocado slices and barbecue sauce, if you like
*If chili is too thick, stir in a bit of hot water until the texture is to your liking
