Easy collard greens stew

Inspired by “gomen wat”, this dish could make anyone a collard greens lover! They melt in your mouth and IMO quite addictive!! A wonderful side dish for your holiday table greens 🥬

Serves 4-6
Ingredients
16 oz collard greens, trimmed and tough stems removed
2 Tbsp unsalted vegan butter
3 cloves of garlic, minced
1 Tbsp fresh garlic, grated
1 large yellow onion, chopped
Salt, to taste
1 tsp ground cumin
1 tsp ground coriander
1/4 tsp ground nutmeg
Red pepper flakes, as needed

Instructions
Bring a large pot of water to a boil over high heat. Add chopped collards and cook until soft, about 12-15 minutes. Drain in a colander and set aside

Heat the in a pan over medium high heat. Melt the vegan butter and then add the ginger, garlic, and cook, stirring for 30 seconds

Add the onions and salt, and cook until the onions are soft and translucent, 5 minutes, stirring often

Stir in the ground cumin and coriander and sauté for 30 seconds

Add the collard greens and sauté on medium high, until the collards turn bright green and wilted, about 10-12 minutes

Turn off heat. Sprinkle red pepper flakes
