Easy, Spicy Gochujang Noodles

A spicy stir-fry of veggies, flavored with gochujang. A great way of cramming a good variety of leftover veggies to your meal. For some added protein, add some tofu cubes or edamame!

A spicy stir-fry of veggies, flavored with gochujang. A great way of cramming a good variety of leftover veggies to your meal. For some added protein, add some tofu cubes or edamame!

Ingredients (serves 4-6)

4 noodle cakes
1 tbsp sesame oil
1 tbsp agave or brown sugar
1/3 cup tamari or soy sauce
4 scallions, whites and greens separated
4 cloves of garlic, crushed
1 tbsp ginger, finely grated
4-5 tbsp gochujang paste (adjust according to your preference)
1 large bell pepper, thinly sliced
2 large carrots, cut into strips
1 cup cabbage, cut into strips
Salt and pepper, to taste
1/2 tbsp sesame seeds (optional)
Fresh lemon juice (optional)

Method
1️⃣Boil a large pot of water with some salt and cook the noodles until al dente (check package for instructions)
2️⃣Remove the noodles and drain and rinse under water. Drain and set aside
3️⃣In a bowl, whisk agave/brown sugar, soy sauce and set aside
4️⃣Heat the same pot to medium, add sesame oil, scallion whites, garlic, ginger and sauté for a minute
5️⃣Add gochujang and continue to cook until fragrant, another 20 seconds
6️⃣Add the veggies and the soy sauce mixture and continue to stir fry for 5-7 minutes
7️⃣Add the noodles, using tongs or fork. Stir to combine.

8️⃣Taste and season with salt and pepper
9️⃣Transfer to a serving bowl and top with scallion greens, sesame seeds and some lemon juice if you like
