Refreshing salsa-salad, perfect when served over a bed of rice and beans. It is crunchy, spicy, sweet, salty, and tangy! Use any variety of mango, the firmer, the better. Try to balance the spice level of the dish according to the sweetness of the mango. I used a sweet Atualfo mango here, so I needed to add more jalapeno and paprika. You can skip the chips if you want to keep it fresh and eliminate any processed food. I added a few to mine because I love the crunch.

Serves 4-6

Ingredients

1 cup firm cherry tomatoes, halved

1 large avocado, pitted, and diced

1 large mango, peeled, pitted and diced

2 medium size firm plums, pitted and diced

3 cloves of garlic, minced

1/4 cup red onion, finely chopped

1 jalapeno, seeded and diced

1 tsp ground paprika, optional

Fresh cilantro, finely chopped, as needed

fresh lime juice, as needed

salt, to taste

Tortilla chips (preferably unsalted), a handful, crushed


  1. Stir together avocado, tomato, mango, plums, red onion, cilantro, jalapeno, and garlic, in a large bowl.

  2. Stir in the lime juice, salt and paprika (if using)

  3. Cover the bowl and chill for about 20 minutes. This allows the flavors to blend well

  4. When ready to serve, crush a handful of tortilla chips and stir into the bowl.
