I adore purple potatoes because of their striking color - also, they are loaded with healing antioxidants and this flavorful salad dressing is a perfect match for these beauties. This simple dish is inspired by a delicious Greek salad that I had at a taverna in Kalambaka, Greece.

Serves 4-6
Ingredients
2 lbs new potatoes
1/4 cup good olive oil
Juice of 1/2 lemon
4 garlic cloves, minced
1 tbsp apple cider vinegar
3 green onions, chopped finely
1 medium red onion, thinly sliced
1 tsp dried oregano
Salt and freshly ground pepper, to taste
1/4 tsp sea salt
Half full of fresh mint, chopped

Boil a large pot of water, add some salt and cook the potatoes until tender but still holding shape (about 10 mins). Drain the potatoes and set them aside to cool down
Meanwhile, in a bowl, combine olive oil, lemon juice, apple cider vinegar, dried oregano, minced garlic, sea salt, crushed black pepper.
Add the above dressing to the cooled potatoes and toss them well making sure the potatoes are evenly coated with the dressing.
Add sliced red onions, chopped green onions and chopped fresh mint to the potatoes and toss well
Check for seasoning and serve at room temperature or chilled.
