One-pot penne with pine nuts

Staying indoors because of the winter storm & I am trying to cook with pantry staples mostly. Like this delicious one-pot penne. This is the easiest pasta you will ever make that is spicy, hearty and incredibly flavorful.

Ingredients

1 pound of pasta (any shape)
1 lb of fresh tomatoes, chopped or 1 28 oz. can of diced tomatoes
6 cloves of garlic, minced
1 onion, sliced
olive oil, as needed
Salt & pepper, to taste
Fresh or dried basil, as needed
Red pepper flakes, as needed
Toasted pine nuts, as needed
Parsley, chopped, for serving

Heat a large saucepan, add the olive oil and garlic and saute for about 15 seconds on medium heat
Add the tomatoes, salt, pepper
Stir in the pasta, red pepper flakes, fresh or dried basil and about 3 - 31/2 cups of water. Cook until the pasta is al dente, stirring occasionally
Once done, stir in the toasted pine nuts and parsley
Serve hot
