Quick and Easy Cabbage Chickpea Salad

This delicious, eye-catching salad is super-easy, quick, filling, and full of contrasting flavors and textures. You can make it heartier by adding in some cooked brown rice, farro, or bulgur.

Serves 2-3

Ingredients

1 small head of cabbage, cored and cut into large strips

1 15 oz. can of chickpeas (or as needed), rinsed and drained

Salt, to taste

Freshly ground black pepper, as needed

Crushed red pepper, as needed

2 Tbsp fresh lime juice

1 tbsp maple syrup or agave (optional)

Toasted unsalted almonds, as needed

2 Tbsp extra virgin olive oil

Directions

  1. In a large salad bowl, combine the cabbage, chickpeas, salt, black pepper, red pepper, and toasted almonds

  2. Stir in fresh lime juice, sweetener (if using), and the olive oil

    And that’s it! It tastes best when you let it marinate for at least 10-15 minutes. Store any remaining in the fridge, the cabbage remains quite crisp!
