This is my favorite salad by far. LOVE IT. Simple, quick, nutritious, nothing fancy, yet super delicious and satisfying. You can use as many or as little of the ingredients to suit your preference. The overall texture of the salad should be creamy. I like dicing the veggies all at once using a large knife but you can dice them individually and combine them. Avoid using a food processor as that could make the veggies mushy. Serve as a salad meal with some bread on the side, as a sandwich filling or stuffed in pita pockets

Ingredients
2 medium size firm tomatoes
1 large English cucumber, peeled
2 cloves of garlic
1 bunch of curly parsley
1 cup tahini
Juice from 1 lime
Salt, to taste
2 Tbsp olive oil

Instructions
Dice up the cucumbers, tomatoes, parsley and garlic into tiny pieces and add them to a large bowl.
Stir in the tahini and lemon juice
Add salt and stir well
Transfer to a serving bowl with a swirl of olive oil on top
